Chicken Papaya Soup

This soup is a Filipino recipe submitted by Arlene Pineda

Preparation time: 5 minutes

Cooking time: 30 minutes


Ingredients

I medium green papaya, peeled and cut into large cubes

2 tablespoons vegetable oil

1 thumb size knob of ginger

3 cloves of garlic, chopped

1 cup red onion, chopped

6 pieces of chicken with skin

5-6 cups water

2 tablespoons fish sauce

1 chicken bouillon cube



Method

  1. In a large pan, heat the oil.
  2. Cook on medium heat and when hot, add the ginger and chopped garlic. Cook for one minute.
  3. Add the chopped red onion, stirring until it's translucent.
  4. Add the chicken and stir for 5 minutes. Add the water.
  5. When the mixture starts to boil, add the fish sauce and chicken bouillon cube.
  6. Lower the heat, cover the pot and simmer for 20 minutes.
  7. Add the green papaya to the pot and simmer for 3 more minutes.
  8. Simmer for 2 minutes before turning off the flame. Do not remove the lid of the pot since the steam will help continue cooking the vegetables.
